Summer is here and that means it’s time for Salads! Enjoy all the fresh fruits and veggies while they’re ripe for the picking with these recipes that will beat the humdrum of your usual, same-old salad.
Summer Salad Recipes
1. Cinnamon Apple Salad with Walnuts: For a real change to your salad routine, try a this Apple Salad that has absolutely no lettuce!
To make your Cinnamon Walnuts, beat one egg white and 1 tablespoon of vanilla extract, until foamy, and then toss it over 2 cups of walnuts. Add a ¼ cup of granulated sugar, 2 teaspoons of cinnamon and a dash of salt and pepper to the nut mix, tossing, so that the nuts are coated evenly. Lay nuts flat out on a parchment-lined baking sheet, and bake at 250 degrees for 1 hour, stirring them halfway through. Let the Walnuts cool, before breaking them apart.
Thinly slice 2 apples of your choice, and then toss the slices in ¼ cup of fresh lime juice. Add 2 chopped scallions, 1 teaspoon of chopped fresh parsley, ½ cup of shredded cheddar cheese, and ½ cup of chopped Cinnamon Walnuts. Mix it all up and drizzle your Apple Salad with 2 tablespoons of olive oil, 2 teaspoons of honey and a dash of salt and pepper.
2. BLT Salad: So you really want to have a big BLT sandwich, but you don’t want the guilt? Enjoy a BLT salad, and satisfy your craving without feeling the regret later; it’s better than the real thing.
For a light lemony dressing, mix up ¼ cup of olive oil, ¼ cup of canola oil, 3 tablespoons of fresh lemon juice, 1 tablespoon of Dijon mustard, 1 teaspoon of honey, 1 minced garlic clove, and a dash of salt and pepper.
Drizzle this lemon dressing over crumbled bacon, chopped avocado, crumbled feta cheese, halved grape tomatoes, and shredded romaine lettuce.
3. The Feel Good Salad: This salad is so full of good-for-you that it should come with a guarantee; if you’re not happier after you eat this salad, then – well that’s just impossible – it’s guaranteed.
For a Honey Vinaigrette, mix up 1/3 cup of olive oil, 2 tablespoons of apple cider vinegar, 1 tablespoon of honey, and a dash of salt and pepper.
Drizzle your Honey Vinaigrette over chopped salmon, chopped avocado, chopped red onion, whole blueberries, crumbled feta cheese, chopped walnuts, and a bed of spinach.
4. Classic Honey Mustard Chicken Salad: It’s sweet, it’s tangy, it’s crunchy, it’s hearty; it’s a Honey Mustard Chicken Salad. Feel free to have seconds and thirds.
For homemade Honey Mustard Dressing, whisk together – ½ cup of plain Greek yogurt, 4 tablespoons of honey, 3 tablespoons of yellow mustard, 1 tablespoon of fresh lemon juice, ½ teaspoon of garlic powder, and a dash of salt and pepper.
Enjoy this dressing poured over chopped chicken breasts, chopped tomatoes, chopped red onion, crumbled feta cheese, and shredded romaine lettuce.
5. Nuevo Honey Mustard Chicken Salad: For a new spin on an old favorite, try this Honey Mustard Chicken Salad that incorporates blueberries and almonds.
For the homemade (nutty!) Honey Mustard Dressing, whisk together 3 tablespoons of almond butter, 3 tablespoons of water, 2 tablespoons of fresh orange juice, 1 tablespoon of olive oil, 1 tablespoon of ground mustard, 1 teaspoon of honey, 1/2 teaspoon of fresh minced garlic, and a dash of salt and pepper.
Enjoy this dressing over chopped chicken breasts, whole blueberries, whole red grapes, crushed almonds, crumbled feta cheese, and shredded romaine lettuce.
