If you’re a keen gardener or have been busy down on the allotment over summer, now may be the time you find yourself with an abundance of tomatoes. Here’s a delicious organic tomato and basil soup recipe, that is both vegan and gluten free.
I was fortunate enough to bag myself a plentiful portion of fresh organic tomatoes so couldn’t think of a better way than to put them to use. With the weather now starting to feel a little more like autumn, a hot soup if the ideal lunch situation.
The best thing about this Organic tomato and basil soup- Vegan, GF recipe is that it only takes about ten minutes to make from start to finish. The other fabulous thing about this recipe is that it’s healthy and very easy.
Ingredients:
1 tea spoon olive oil optional
1 medium onion chopped
3 large cloves of garlic (cut into little pieces)
7 cups of chopped fresh tomatoes
1 handful of basil leaves
2 teaspoons salt and pepper (adjust to taste)
Method:
Heat a the oil on a medium heat
Add the chopped onions and garlic and cook for about one minute.
Add the fresh chopped tomatoes.
Gradually cook over a medium heat, stirring every few minutes until the tomatoes are soft.
Remove from the heat and add basil and salt and pepper.
Grab a hand whisk and blend until smooth.
