Cambridge at Easter is always worth a punt.

We basked in the joys of spring on a little jaunt to Cambridge with @terrylemac and our precious niece and nephew.
We visited our dear uncle David’s house and enjoyed the garden, the blossom was in full bloom and the sun was shining, the wisteria was making an appearance, and the magnolia smelt phenomenal. We picked up fresh croissants from the bakery, got the bouncy castle out, watched rom coms, ate delicious food and laughed into the early hours. Good times.

🌸What in carnation is going on here? Swipe to see the moment that I found myself surrounded by the most spectacular display of botanical flower paintings from the 17th to 18th century, including works by notable artists George Flegl and Rachel Ruysch.

🪻In 1679, at the age of fifteen, Rachel Ruysch began her artistic journey as an apprentice to Willem van Aelst, a renowned flower painter in Amsterdam. Under his guidance, she quickly developed her skills, and by eighteen, she was already producing and selling her own signed works independently.

🌷In 1693, she married the Amsterdam portrait painter Juriaen Pool. Together, they had ten children (😳), yet Ruysch continued to paint throughout her marriage and adult life. At a time when women were typically expected to engage in domestic arts such as sewing and spinning, she pursued her passion for painting and maintained a successful career. Her income likely supported the family in hiring help, allowing her to balance both motherhood and a thriving artistic practice. Ruysch’s dedication and talent earned her an international circle of patrons and a lasting legacy in the art world.

🌼It’s pretty unusual to see a female name next to one of the great works from hundreds of years ago in any fine art exhibition. I often wonder about all that talent that was never given the opportunity to flourish in a patriarchal society.

Throwing it back to last autumn, when we had the pleasure of wandering through the enchanting Bodnant Garden, a true gem nestled in the heart of North Wales. The garden’s fiery reds and golden hues painted a perfect backdrop, especially in the Rose Garden and the towering trees in every variety imaginable. 🍂🌳

From the rich history dating back to 1874 to the serene beauty of the Wellingtonia trees and the Skating Pond, every corner of this place offered a peaceful escape.

Even in the colder months, Bodnant Garden was breathtaking with snowdrops, camellias, and the peaceful winter garden providing a quiet beauty for those seeking tranquility.

🥣 Pho the love of trying something new and not

🥣 Pho the love of trying something new and not getting stuck in a recipe rut...

I've been meaning to share this recipe since I shared on my stories in the new year, a few of you had asked so apologies for being so darn slow.

As with most things I do, this is a fairly organic mash up of what's in the cupboard and a few different recipes, inspired loosely by @loveandlemons Pho Vegetarian Recipe - with a few bits added. It's super easy to make and a batch will serve you well for those weekday lunches.

Ingredients...
1/2 small onion
Fresh ginger
Shiitake mushrooms (or similar)
Bok choy
Edamame (if you like)
Packet of rice noodles
1/4 cup tamari (to taste)
1 cinnamon stick
Pinch of Chinese Five Spice
1 tablespoon whole peppercorns
5 cups water
2 garlic cloves, crushed
1 tablespoon rice vinegar
Sliced chilles
Lime slices
Spring onions (to garnish)
Thinly sliced radish (to garnish)
Dollop of peanut butter
Fresh corriander (or herbs of your choice)
Splash of Soy Sauce

To make...
Combine cinnamon stick, peppercorns, and garlic and stir for about 30 seconds.
Add the water, onion, ginger, and the shiitake mushrooms. Simmer for 20 minutes, then strain and return the liquid back to the pot, add the tamari, rice vinegar, and simmer 15 minutes.
Add the bok choy and edamame and cook until tender, 5-8 minutes. Taste and season, add rice vinegar for tang.
Add the mix over the cooked rice noodles. Serve with the lime slices, radish, herbs, chilli peppers etc.
