Organic chunky vegetable soup- Vegan, GF: Am I the only person feeling like the summer is drawing to a close? perhaps that’s just how it feels here? There’ve been several days of late where a hearty, chunky vegetable soup have been just what the doctor ordered. Here’s my Organic chunky vegetable soup recipe, which is both vegan and gluten free and packed with healthy goodness, ideal for the changing seasons.
As with my previous Organic tomato and basil soup recipe this dish is pretty quick to make and is both filling and healthy and most importantly packed with the nutrition that your body needs to heal and to support your immune system as the temperature drops.
Ingredients:
3 gloves of garlic cut into pieces
1 teaspoon olive oil
1 teaspoon turmeric
a few sprigs of rosemary
a few bay leaves
2 onions
4 carrots
8 new potatoes
1 gf stock cube
2 teaspoons salt and pepper (adjust to taste)
2 cups of water
Method:
Heat the oil on medium heat
Add chopped onion and garlic (cook until soft)
Add turmeric
Add chopped potatoes and cubed carrots
Stir until all veg is covered in turmeric
Mix your stock cube in the 2 cups of boiling water
Add the water to the veg
Give the pan a good stir
Add rosemary and bay leaves
Add salt and pepper
Gradually cook over a medium heat, stirring occasionally
Remove bay leaves and rosemary before serving
Enjoy!
