Beware, I may be about to blow your mind with this almighty Two Ingredient Pancake- Paleo Recipe! As I may have mentioned in 2015 I am on a crusade to improve my health by learning about nutrition and adopting a much more natural diet, less refined sugar, grains, fatty foods, more plants, oily fish, fruit, nuts and seeds! My focus is on all those new amazing healthy recipes I can add to my ever expanding repertoire, which I shall be sharing along my journey, starting with my latest breakfast conquest:
Paleo recipe? This Two Ingredient Pancake is suitable for those eating a paleo (caveman) diet. For those unfamiliar with Paleo: The fundamental principles of Paleo is to eliminate or drastically reduce consumption of grains (wheat, corn, rice, barley, sorghum, oats, rye, and millet) whether they are refined or whole. It’s thought that our cavemen/ cavewomen ancestors wouldn’t have had access to such a high percentage of grains and that our bodies are not equipped to process such vast quantities of grain based foods (typically found in the western diet) in turn health risks are greatly increased by the consumption of high levels of grain. What you’ll need:
x1 Egg
x1 Banana
Frying pan and whisk (or fork if the noise of a blender is just too much first thing in the morning)
To make: Mush up your banana whisk together with your egg, make sure your mix is blended together well, add to a hot frying pan (be sure to add oil to our pan first so your pancake doesn’t stick!) I use RAW Coconut oil-Voila!
The pancake tastes great and is fabulous served with lemon or local honey.
*Top tip: It is thought that a spoonful of RAW local honey everyday is said to help reduce pollen related allergies, so if you suffer from hay fever get to your local farm shop and bag yourself a jar.
